Cherries in the Snow

Cherries-along with peaches, grapes, apricots, and apples-are grown successfully on the western slope (west of the continental divide) in Colorado. Ask an adult for help making the recipe below. When you're done find out why it is called "cherries in the snow."



Cherries in the Snow:
2 8-oz. packages of cream cheese, softened
4 cups nondairy whipped topping
1 tsp. vanilla
Angel food cake, crumbled
1-2 cans cherry pie filling

1. Combine cream cheese, whipped topping,
and vanilla in large mixing bowl.
2. Place half of cream cheese mixture in 9 x 11
glass baking dish
3. Sprinkle angel food cake with other half of mixture.
4. Cover angel food cake with other half of mixture.
5. Top with cherry pie filling.
6. Allow to cool in refrigerator for 1-2 hours until firm.
